Apple Pie By The Light Of The Moon

Apple Pie By The Light Of The Moon was created by SuperflyPete
Fucking wicked delicious:
1 gallon Apple Cider
1 gallon Apple Juice (He got the Mott's!)
20 cinnamon sticks
20 cloves
2 cups white sugar
1 cup brown sugar
10 quart mason jars
2x 750mL 190 proof Everclear or 100% uncut 'Shine
Heat the cider, cinnamon, cloves, and juice just to a simmer, just before a rolling boil, then add the sugar. Mix until it's in solution, then take it off of the heat. Cover.
When it's cooled, remove the cinammon sticks and put two in each jar. Remove the cloves and put them in the trash. Add the Everclear and mix it really well, then load up the 10 jars.
Seal them tightly, and put them in a dark, cool place (cellar, under the stairs, or fridge, I suppose) for at least two weeks to let the flavors mingle and mellow that shit out. (Drinking straight from the stock pot at this point would be like having your teeth knocked in with a steel ladle...Everclear aftertaste is hideous)
Shit is fucking wicked good.

While it was a slightly different recipe, we gave out small jars of this for our wedding favors.

I've tried 4 recipes now, and thus far this is the best tasting. I started out with all white sugar, no cloves, less cinammon, and less alcohol. This iteration is the "so far" pinnacle, and at 30 proof, it's stout enough to remind you that you're about to be wasted, but it's weak enough that you can't taste it.
Next batch I'm going to try adding 2 cups white and 2 cups brown. The cinnamon and brown sugar really accents one another. The cloves add that 'yummuh' factor, but last time I tried 30 and it was way too overpowering.
